The non-vintage Valdespino Isabela Cream Sherry is dark mahogany in color with aromas of dried fruits, oak, spice, prune, and raisins. The palate is smooth, well balanced, rich, and complex with a very long finish. There are 120g/L of sugar, but this comes across as less sweet than the typical Cream Sherry.
Varietal Composition: 75% Palomino Fino, 25% Pedro Ximenez
Aging: Isabela is an old Oloroso blended with some PX from El Candado. Some of the blend ages together. In total the oxidative aging exceeds 15 years.
