"Our 2023 San Simeon Cabernet Sauvignon is a true expression of Paso Robles, crafted from five of our estate vineyards, each contributing distinct soils and microclimates to the blend. Nestled within this coastal appellation and influenced by the cooling breezes of the Templeton Gap, the vineyards benefit from warm days and cool nights—ideal for growing exceptional Cabernet.
After fermentation and pressing, our 2023 Cabernet Sauvignon ages gracefully in a thoughtfully selected blend of 60% new French and American oak and 40% neutral oak. From its deep, dark hues to its robust flavors of black cherry, cassis and ripe plum, each sip unfolds layers of complexity. Enticing aromas of cedar, baking spice and tobacco beckon from the glass, leading to a rich, spicy mid-palate with soft, long-lasting leathery tannins. The wine finishes with a long, round and silky texture leaving a lasting impression."
