Dingle Single Malt, a core expression from Dingle Distillery in County Kerry, Ireland, is a triple-distilled whiskey matured primarily in ex-Bourbon and Pedro Ximénez Sherry casks for 6-7 years. Soft spice notes (allspice, nutmeg, and cinnamon) mingle with more earthy tones and a touch of aniseed. The sherry influence gets the dark chocolate, raisins, cherry, and dried apricots, with some licorice in the background. The finish is medium to long and dry with lingering notes of honey and chocolate.
