Winery's Notes:
"This 100% Syrah fruit originated from the Homestead Vineyard of the Willow Creek District in Paso Robles. Once the grapes were harvested and hand sorted, we transferred them to a fermenter and left them to ferment for seven weeks. Typical carbonic fermentations bleed off the juice at the bottom throughout the process. As the weight of the clusters gently pressed themselves, we opted to retain the juices in the bottom of the fermenter to extract more color and flavor. The resulting product is a surprisingly complex carbonic style. Once ready, the wine went to basket press and then arrived in a neutral French barrel for six more months before bottling."
