"This wine is carefully crafted through a meticulous process that begins with gentle pressing into stainless steel barrels. Here, it undergoes a long, cold fermentation, allowing for a slow and steady transformation of the juice into wine. The cooler temperatures help preserve the wine's delicate aromas and fruit- forward characteristics, while also enhancing the clarity and purity of its flavors. This gradual fermentation process plays a key role in creating a wine with refined complexity and vibrant freshness.
Once the wine reaches complete dryness, sulfur dioxide (SO2) is added to inhibit malolactic fermentation, preserving the wine’s bright, crisp acidity. This decision to block the secondary fermentation ensures that the wine retains its lively character, allowing its natural fruit and floral notes to shine. Aged for 11 months on its lees (sur lie) in stainless steel barrels, the wine develops added texture and depth, imparting a subtle richness without compromising its fresh, clean profile. The result is a beautifully balanced wine with vibrant acidity and an elegant, smooth finish."
