Winery's Notes
"The Hestan Vineyard has 110 planted acres of low-yielding Bordeaux varieties and is located on the Napa Valley’s remote Eastern Slopes. The property was a former cattle ranch and was purchased by Stanley and Helen Cheng in 1996. The soils are well-drained and the microclimate in this area is warmer than the valley floor, with an average diurnal of 30 degrees each growing season. Both the vineyard and the gardens are sustainably farmed and 100% solar powered.
The lots for Hestan Vineyard Cabernet Sauvignon are kept separate throughout winemaking to retain individual block and varietal characters. Small capacity fermentation tanks, carefully timed pump-overs and punch-downs, a mix of native and cultured yeasts, the finest French cooperage and extended aging result in a wine noted for its deep flavor and velvety tannins.
The wine displays a deep ruby color. Aromas of black cherry cassis, blackberry, and smoky leather emerge on the nose with a hint of spearmint. The palate shows flavors of currants, coffee, mocha, and a whisper of graham cracker and baked apple pie. On the finish, the wine shows firm tannins with medium-plus acidity and exhibits a long finish. Can age for 20 years."
