The non-vintage Gonzalez Byass Tio Pepe is a Fino style, the most delicate and elegant of the Sherry styles. It is made from Palomino grapes and aged for 4 years under the flor, a unique layer of yeast produced naturally in Jerez. Due to the fact that the flor protects the wine from oxygen, it has been able to maintain a pale golden yellow color. On the nose, sharp yet elegant aromas of the flor yeast is balanced with almond notes typical of Palomino. On the complex palate, it is completely dry with reminders of almonds, green olives, and green apple, finishing with a slight bitterness.
