"Brut champagne made only from Chardonnay. The origins of the terroir are exposed by revealing a wine of great generosity. Usually the cuvée is made from a blend of 15 wines from 5 to 6 different vintages. 70% of the wines are vinified in small oak barrels and 40% do not go thru malolactic fermentation.
Champagne is pure gold in color. The nose is expressive with fruit and brioche accents, upon aeration, it expresses hints of peach and hints of citrus. The palate is muscular, long with delightful finesse."

"The NV Extra Brut Blanc de Blancs is largely vinified in oak with a portion of the wine not undergoing malolactic fermentation. The pale golden wine shows off dried corn husk and polenta on the nose. The palate comes with a certain roundedness that seems to drip with juiciness. This is distinctly Chardonnay, but with more oomph, more fruit, more softness. Mirabelle and lemon swirl while autolysis backs them up and absolutely lip-smacking freshness pulls all the delicious strings. A lovely picture of Ambonnay Chardonnay. Lot 04/2023.
