Winery's Notes:
“Valliant Chardonnay comes from own-rooted vines planted in 1992 with clones 76 and 4. The vineyard is on a partially terraced slope that has large inclusions of granitic deposits. The blocks are full of different vine ages and a mixture of clones. Chardonnay grapes from blocks O, B, and A at Eden Rift were hand- harvested over separate days in September and early October. At the winery, the Chardonnay was whole- cluster pressed with the resulting juice transferred to a stainless steel holding tank for cold-settling. The wine was fermented in both oak and stainless steel, with both new and neutral oak used. Cool summer fog and winds off the Pacific Ocean allow for elongated hang-times and flavor development, providing us a vintage that is rich in its complexity. This Chardonnay is bright and inviting, with notes of pear, lemon zest, exotic fruits. It is balanced with orange cream and fresh white flowers. Its rich texture is countered with distinct minerality and crisp acidity.”
