Mezcal is an agave based spirit that is distinctly smokier than its cousin tequila, due to being cooked in earthen pits lined with lava rock, rather than cooked in an oven. This process gives rise to a plethora of earthy notes that compliment the sweet agave very well, like hops to malt.
