The 2019 Vigneau Chevreau Cuvee Silex Vouvray Sec is produced with Chenin Blanc grapes on clayish silicate soil, hand harvested. This wine ferments two months in barrels and matures in the tank on fine lees until the spring. It develops a good balance between acidity and a light residual sugar which gives a natural fresh flavor. The soil gives a mineral taste of flint stone which will increase over time. It can be characterized by yellow, shining color and aromas of apple, quince, and citrus fruits. Pairs with seafood and as an aperitif.

"A taut, focused dry style that's organically grown and hand-harvested. Hailing from silex soil, as the cuvée name makes clear, the 2019 Cuvée Silex is a compact and precise offering with laser-like, citrus-driven acidity. There's crisp apple fruit and white flowers on the nose, but this wine is all about the terroir-driven structure. It is uncompromising and sure of itself." -RG, Mar/2021
