Product Overview
The 2018 Eleven Eleven XI Estate Cabernet Sauvignon is the inaugural release from the 11:11 and Destin Vineyards which were planted in 2014 and 2015. The wine's dense and inky appearance focuses the nose to persistent aromas of dark plums and blackberries. Hints of graphite and black olive round it out giving this powerhouse a perceived maturity. The palate commands attention, balanced by acidity, tannins, and weight. Layers of cacao, raspberry, cinnamon, and nutmeg are the most prominent flavors followed by a hint of white pepper. The polished and fine-grained tannins complete the palate with finesse. This wine is approachable, yet simultaneously formidable with all the heft and structure needed to age. This young and bold wine will pair well with a classic ribeye or Santa Maria tri-tip for the meat lovers. For something interesting, try it with a truffle cacio e pepe or a cacao rubbed pork chop.
