The 1999 Billecart-Salmon Le Clos Saint-Hilaire Blanc de Noirs Brut is a rare single-vinyard Champagne. The one-hectare Clos Saint-Hilaire meets the strictest guidelines: a single enclosed, contiguous parcel with complete winemaking facilities on site. In the glass, a sustained yellow gold hue is highlighted by intensely golden reflections and ultra-fine and persistent bubbles. An aromatic impact of a great vinous complexity (fresh figs, bergamot, and light tobacco) shows an intense blossoming of character, honeyed by a state of maturity of ripe fruits and spice. On the palate, a profound and ample texture with accents of lightly candied citrus and panettone expresses an exuberant richness of flavors (wild peach, mandarin cordial, roasted sweet chestnuts and precious woods), while its mineral finish ends on mouthwatering notes. This exceptional cuvée will enchant your taste buds when paired with a delicious line-caught seabass accompanied by roasted ceps, or with Breton lobster.

"An extraordinary one-hectare parcel of Pinot Noir planted in 1964. Deep golden hue. An extremely rich and majestic nose with savory notes of cocoa, smoked mushroom, forest floor earthiness, grilled hazelnuts, orange marmalade, spiced cherries, plums and spiced bread. Wildly complex! The palate has a languid, toasty core of flavor with a deep warming wash of spices, toasted almonds and grilled hazelnuts. Freshens to dried cherry and plum pastry leading into a smooth and vinous finish. Striking depth and grace. Drinks like an old Burgundy. Disgorged in June 2014." -JS, Oct/2017

"Billecart's 1999 Le Clos Saint-Hilaire is exotic and beguiling. Constantly changing in the glass, the 1999 offers exquisite aromatics, silky and a real sense of underlying phenolic structure. Crushed rose petals, licorice, smoke, game and tobacco add nuance as the wine opens up. With time in the glass, the personality of these Pinot vines becomes more and more expressive.
